It was one of those weekends where I feel like I need a weekend from my weekend. I participated in my first craft fair for my PO business and while it was fun to get out there, it was exhausting. That same day we got together for a little “cousins Christmas party” at my brother’s house, and I could feel myself falling asleep on the couch. Since we each had to bring something for the party I grabbed a box of pasta from the pantry, pulled some sauce out of the freezer, and whipped up some extra meatballs. Someone claimed dessert before I could, but if was in charge of sweets, I would definitely brought these amazing cookies I’m about to share with you.

How many parties are you going to this Christmas season? How many include a little comment about bringing “a treat to share”? Most of them, I bet. I’ve got the hands down best treat you could ever bring to a party. These cookies are guaranteed to be eaten and enjoyed by everybody. But just to warn you, if you bring them to one party you will have to take them to every single shindig that follows. People will be extremely disappointed if you don’t.

I made these Rolo Cookies for a party last Wednesday, and I’ll be bringing these cookies to another party in a couple weeks. Like I said, if I don’t bring them, I may never be asked back.

I’m always sure to have the ingredients in my pantry in case I’m ever in a bind. With only 4 ingredients (and an optional 5th), Rolo Cookies are quick and easy to make, even if you only have an hour until party time. This is a great recipe for little bakers to get involved in the kitchen.

The ooey, gooey, deliciousness of chocolate and caramel is hard for anyone to resist. I hardly ever have to bring home leftovers when I bring Rolo Cookies to parties. I call that a win!

Rolo Cookies

Prep 10 minutes
Bake 10 minutes
Cooling 10 minutes
Total 30 minutes

Makes 24-36 cookies

Ingredients

1 box Super Moist Devil’s Food Cake Mix
24-36 unwrapped Rolo Chewy Caramels
2 eggs
1/3 cup vegetable oil
Powdered sugar for dusting (optional)

  1. Preheat the oven to 350 degrees. Combine the cake mix, eggs, and vegetable oil and stir with a spoon or combine with your hands to form a dough.
  2. Using a cookie scoop, roll the dough into little balls (about 1-inch in diameter) with 1 Rolo inside each ball.
  3. Bake for 10 minutes. Allow the cookies to cool on the cookie sheet for about 10 minutes to allow the caramel to set.
  4. Dust the cooled cookies with powdered sugar (optional).
Notes
  • I like to use parchment paper on my cookie sheets especially for this recipe. Clean up is easy if the caramel leaks out during baking and makes it easy to save the powdered sugar after dusting.
  • I recommend buying the Rolos that are in the roll if you can. It saves a lot of time if you don’t want to sit there unwrapping a bunch of candies. If you have little helpers, unwrapping Rolos might be a good job for them.
