Easy Slow Cooker Chicken Tortilla Soup
This slow cooker chicken tortilla soup makes for an easy dinner when you don’t want to turn on the stove or the oven or if you're going out for the day and won't be home until dinner time.

- 1 chopped onion
- 2 cloves of minced garlic
- 1 lb shredded or diced chicken
- 14.5 oz can diced tomatoes
- 1 ¼ cup enchilada sauce
- 1 4 oz can chopped green chiles
- 1 ¾ cup chicken stock
- 2 cup water
- 1 tsp cumin
- 1 tsp chili powder
- 1 tsp salt
- ¼ tsp black pepper
- 1 bay leaf
- 1 cup organic frozen corn
- 1 tbsp chopped cilantro
Toppings
- tortilla chips
- shredded cheese
- avocado
- chopped cilantro
Add chicken, tomatoes, enchilada sauce, onion, green chiles, and garlic into a slow cooker. Pour in water and chicken stock and add seasonings. Stir in the corn and cilantro. Cover and cook on low for 6-8 hours or on high for 3-4 hours. Top with your favorite toppings and enjoy!
