With only 4 ingredients (and an optional 5th), Rolo Cookies are quick and easy to make, even if you only have an hour until party time. This is a great recipe for little bakers to get involved in the kitchen.

  • Preheat the oven to 350 degrees. Combine the cake mix, eggs, and vegetable oil and stir with a spoon or combine with your hands to form a dough.
  • Using a cookie scoop, roll the dough into little balls (about 1-inch in diameter) with 1 Rolo inside each ball.
  • Bake for 10 minutes. Allow the cookies to cool on the cookie sheet for about 10 minutes to allow the caramel to set.
  • Dust the cooled cookies with powdered sugar (optional).

Notes

  • I like to use parchment paper on my cookie sheets especially for this recipe. Clean-up is easy if the caramel leaks out during baking and makes it easy to save the powdered sugar after dusting.
  • I recommend buying the Rolos that are in the roll if you can. It saves a lot of time if you don’t want to sit there unwrapping a bunch of candies. If you have little helpers, unwrapping Rolos might be a good job for them.
